I have in the past used lots of self-watering planters.
These planters have a tray at the bottom that allows the water to drain to the bottom so that it is used by the plants.
Depending on the plants chosen as to how often the plants would need to be watered.
I feel that trailing succulents would be a good fit for what you want to do.
String Of Pearls is the first one that comes to mind.
Another favorite plant is Burro’s Tails.
