Hello,
I've been looking at digging out an area to use as an underground fruiting chamber for mushrooms for the past several months. I currently fruit everything indoors, but I'm looking to expand my operation a bit. Given the high humidity and lower natural temps, I figured this would be the perfect environment to fruit mushrooms without having to manually adjust or tweak many variables.
I've been reading through dozens of posts here, which have given me a lot to think about in terms of planning and design. Has anyone else built a cellar for this purpose? Are there factors I should consider that perhaps I wouldn't have come across in other posts?
I'm in south Mississippi, USDA zone 8b, for reference. Thanks!
