I am happy for your interest in what myself and many others consider to be the most traditional and historically important food of the human race. My deepest hope is that this delicious and powerful food will inspire you to plant oaks selected for superior acorn size and palatability (now available at oikos and others).
To the best of my knowledge this is not available anywhere else, because the time consuming cold leach process leaves the precious oil in the nuts, which also acts as a binding agent in the place of gluten.

About the flour:
made from a mix of red and white acorns which I gathered around my home in massachusetts and a friend's house in rhode island. The trees were located away from pollution such as busy roads. I cracked the acorns using a davebilt nutcracker (works very well, see picture). After meticulous hand sorting of the nutmeats i ground them into a course meal and began leaching out the bitter tannin. I followed the cold leach process described on eattheweeds.com by green deane. After many water changes i ground the acorns almost to a powder and finished the leaching.

The flour was then dried in an electric dehydrator at 105 degrees F, to maintain the most nutrients and flavor. Because the oil is still in the nuts they are subject to rancidness over time, however i have them stored in the freezer and the shipping time is too quick to cause a problem.

I would be able to produce this much cheaper if i had access to bigger and better acorns and did it on a larger scale. This is intended for research purposes before a larger investment is made to this end...and of course would make a great gift for anyone interested in gluten free, traditional, or sustainable food.
