This is the butcher our family apprenticed with for 18 months in preparation for opening our own on-farm USDA/State inspected meat processing facility a.k.a. the butcher shop.

In fact I would suggest that even people who do attend the workshop get a copy of this set of DVDs. It is inexpensive and hours of excellent review of the material. You can pause, rewind and watch it over and over. Our daughter Hope, age 10, loves watching the DVD and has seen it many times. She can’t wait to cut meat!

Wow, only $90? I'll mention this to a few people and will hopefully make it out there myself.

Cole is an excellent and enthusiastic instructor.
I took a hog slaughtering/butchering workshop 2 years ago and he was the butcher for one of the days. That workshop was sponsored by NOFA-VT and was a 2 day affair, $100, lunch included. FYI.

Wish I could make it. His DVD is unavailable on Amazon. If you go, can you let me know if there's a different way to order it?
