I've been experimenting with hot cereal lately, and this one has gotten good reviews:

melt 1 Tbs butter in a heavy-bottomed saucepan

add 1/3 c. or so, each, steel-cut oats, whole buckwheat, amaranth

shake saucepan occasionally, until a good fraction of the amaranth pops like popcorn

add 4 c. liquid (water, milk, juice, etc.) & cover

(optionally, some portion of this liquid can be sourdough hooch or yogurt: if added when lukewarm, the mix can be fermented overnight before continuing)

add fruit, if desired

simmer 40 minutes (less if it has been soaked)

add salt, sugar, milk, nuts to taste
