Shagbark Hickory Nuts - Non-desert recipes?

Hi,

This is my first post on this site. I recently moved to a small scale, chemical-free vegetable farm.

I'm trying to learn more about eating seasonally in a temperate climate, which obviously includes preserving the harvest.

Last Fall I gathered a good amount of shagbark hickory nuts and I've been searching for non-desert recipes for these.

Any suggestions would be appreciated!

Hi, Ellen and welcome to permies!

We use foraged nut meats in a lot of rice dishes, sprinkled in a stir fry, on a plate of cooked greens, in a salad, hardly ever anything sweet. Our shagbark nuts are really flavorful so it doesn't take many. I just wish they produced every year
