Judith, when you call something a pumpkin, you mean big, not so tasty ones often used for fodder,
as opposed to 'winter squash', which are the standard eating varieties?

Curried pumpkin soup's good:
fry off onion, ginger root and garlic with loads of ground Indian spices.
Add chopped pumpkin and water, cook till soft, puree and salt to taste.
I always add something acidic at the end -pickled lemons/limes are good, or vinegar.
Coriander leaves on top are delicious, and replacing some water with coconut cream makes it fancy!
