How long does sealed unrefrigerated ghee last?   I have encounter figures ranging from 18 months to 10+ years.  I have begun using it in some dishes and am getting curious.

a long, long time.... i would personally keep and use til it smells off. if it's been refined well enough (moisture out, milk solids out) you should only have a butter smell, not a yogurty kind of smell, and it should be essentially all fat. I keep mine in the fridge just in case (since I usually clarify mine in a hurry).

It will last a very long time as long as you don't let it get exposed to moisture. If you use utensils to get it out of the jar, make sure they don't have water on them.

This is such super advice for pretty much anything, and I wish I had learned it as a kid!
As an adult learning to cook, I had an Indian friend who taught me "Clean Dry Spoon Only" for pickles and sauces. But it is so true for everything- jam, preserves, gochujang, honey, molasses, anything. Clean and dry utensil will keep things for longer.
