Yes, totally awesome but even for my latkes, I don't peel, just grate 'em up.

Hi Judith. Most of the time I eat the skins. But, there are times that having skinned potatoes is nice. Mashed potatoes, for instance, are creamier without chunks of skin. There's also the question of solanine, which might be mitigated by not eating so much skin and eyes. But I do see your point, a little trivial for most uses.
