I spend a lot of each year (including summer) off grid and without refrigeration. I used to grow leaf lettuce knowing I could harvest only as much as I was going to eat right then. I found I also can pull just a few leaves of cabbage off the head, leaving the rest in the garden to harvest a few leaves at a time for a month or more (I do replace one of the biggest removed outer leaves over it as a hat to keep it from drying out in the sun). I've read you can also harvest celery by the rib, rather than by the bunch, but have not tested that to see if it works for me.
