WASTE NOTHING!!! Harvest every possible bit for yourself, feed pets and livestock, and
compost anything else in an already hot pile.
Scale/density matters. If you are harvesting one or two large animals a year on 80 acres is very different than a rabbit or chicken every couple days in a backyard.
Stock doesn't really freak out if you are calm. Not to get too dark, but look at the trains to Auschwitz--people stayed calm; animals aren't that different.
Paul has a couple good videos on animal harvest. Farmstead Meatsmith really has a good one on large animals.
