Old School Bakeries in Ontario? (brick oven, sourdough type stuff)

Greetings!

I'm wondering if ya'll can help me track down the more traditional bakeries in Ontario.

I'm talkin masonry oven, wood fired, stone ground flour, no added yeast, old world recipes.

Something along the lines of Little Stream Bakery in Perth, Ontario : http://www.littlestream.com/

These bakeries tend to be located in townships and often don't have websites.

I'm trying to find work as a bakery labourer for the winter (as masonry will grind to a halt).

All help is very much appreciated ^_^

Grainharvest bread house has bakeries in Kitchener in the old Austrian style

and Majas (http://www.majas.ca/) is on Manitoulin Island.

not sure if either have room for anymore workers (especialy Majas - the island has a population of like 1000 in the winter!) but they may know somebody.
