Storing new potatoes in jars?

My digestive system can't handle potatoes unless they are new (New potatoes have less starch and starch can be a problem for me). I have been eating new potatoes that are sold in jars but we will emigrating soon and I am a little worried that I won't be able to buy new potatoes in jars anymore so can anybody tell me how to store new potatoes in jars, please?

Bottling in a pressure cooker... Because they are a non-acid food, the processing time is phenomenal.
