Ooh, nice! I'm envious.
Lotus stems are used in Kashmiri cuisine, really delicious and beautiful. I've had them in a veg curry, and often in oily-spicy pickles. Yum!
Besides which, they are so beautiful that if they bloom for you, that's worth more than just another vegetable.
