Few questions for winter growing and walapini

We are pretty new only having a traditional summer garden in the past, But we are expanding. I built an indoor green house and had a few questions. Our soil kind of sucks but I'm trying the mini huglekulture in my walapini. So if someone would please should on this (first pic). Also if anyone can give me a little direction on walapini growies that would be cool.

I am having great success with New Zealand spinach in the shady part of my greenhouse.  The leaves get larger in response to less light. Bok choy, broccoli, kale and so on do well over the winter.
