Aquaculture or Food Forest Classes in Midwest?

I really really don't want to travel out west for additional permie classes like aquaculture or Food Forests, but I cannot seem to find any around Illinois this summer... (not that I don't love it out there, but gas $$ and karmic debt for burning fossil fuels...)

I've checked Midwest Permaculture and with the Permaculture Activists, and now here.. anyone else I could talk to?

I'm in southwest Missouri and the situation is similar. It seems there is very little going on in the Midwest as far as permaculture is concerned.

We are trying to start  a Environmental Education Center on 80 acres in Central Iowa.  The thought is to bring in experts and have classes on the land.

Sounds great, but we do not use Facebook , (we don't trust it). We can Teach Cheese Making Classes.

I live in mid Missouri about 15min west of Jefferson city, my family and I have bought a small farm and are in the process of giving it a permaculture face lift. We have owned and operated a organic CSA farm for several years now and are transitioning the new farm to aquaponics. I have a great deal of knowledge in the hydroponic/aquaponic industry and would love to share that with people. I have completed the Mollison video course as well as his PDC manual and other books and plan on opening a learning center here in the near future. I am in the process of building a 12x100 greenhouse with a 5000 gal tank for fish and Prawn. 40' of this will be devoted to sub tropical and tropical dwarf trees. I will also have an attached 20x20 nursery for tree starts. We will be using a compost and a solar hot water heater to heat the 14Lx10wx7d underground tank and should have no problem keeping it all warm and cozy. A few other projects are converting a mid 1800 English cottage to a cob hybrid as well as a food forest and ponds. We would love to share our passion with anyone who is interested, we have plenty of land cute critters and a passion for permaculture. We are an open minded family of 3 and would love to help

PermacultureProject.com has design courses and other classes available in Carbondale, IL.  I haven't taken any yet, but I know at least one person who recommends them, so there's that to go on.
