Depending on how you space the plantings, could you create some little frost covers for the plants, or a mini "hoop house" cover for a row of them? Depending on materials available you could use wire,
wood, plastic sheet, cloth, etc. Something you can put over the plants around dinner time to keep the cold night air from chilling the plants? It would also keep those pesky
deer from walking by at night and munching on the new sprouts.
Mulching could be good if the ground isn't frozen, but if the soil is still really cold the mulch will keep the soil colder longer which will affect the plants. So if you want to be really hands-on, you could mulch but remove it during the sunny days and put it back at night, but that's time intensive...
