Yep. Wheat weevils. I've had two infestations so far since posting this
thread. Once in yellow field corn, and once in spelt grain.
At this moment I am freezing every bag I have on hand that is not in a
bucket for 4 days.
Strangely, none of the wheat in any of the dozen+ buckets I have has ever had these weevils, and I've had that wheat for far longer than the wheat still in bags.
