I grow a big variety of herbs/spices and looking to add more to my arsenal.    So especially making PICKLES!   What are your favorite herb/spice combinations for pickles?  

What I grow so far to use (will probably forget some)...    Tarragon,  Dill,  Coriander,  Mustard Seed,  Chives,  Garlic Chives, Cayenne,  Jalapenos, Rosemary, Savory, Basils, Oregano, Stevia, Loveage, Garlic, Caraway...

What's your favorite combo?   Give me some ideas to try and new herb/spices to grow!  I especially love zucchini pickles,  better than cukes IMO.

This year I have been combining garlic, jalapeño, and lovage seed. I’ve used these for lacto-fermented “schwarma” beet/turnip pickles, and also for radish-pods.

My friend's favorite spices are: ½ tsp mustard seed
½ tsp ground celery seed
½ tsp ground turmeric
¼ tsp ground cloves
In Apple Cider Vinegar with some demerara sugar.

Unfortunately, none of those grow here. I'm not going to sweat the small stuff, but it's on my list to try to make apple cider vinegar, as apples do grow here. And we pretty much pickle what we grow. She was away when her cukes matured, so I made hers for her and added a bit of Thai Dragon pepper that I grew. The pickles had a bit of a kick!
