A friend of mine in Austin wants to do tree seed bombs like me and asked how to do it. I'm unfamiliar with that region and the plants that grow best there. With a focus on edible, medicinal, and pollinator plants that aren't invasive, what is best there?

I found several good resources that you can share with your friend.
I am in the same region as Austin so I know oaks and live oaks do really well. I also see a lot of lance leaf sumac growing wild and they are beautiful red shrubs in the fall.
This one recommended big tooth maple, lacey oak, eve's necklace, and texas ash as native medium-size trees for Travis county where Austin is.

Golden Ball Lead Tree. They are Leguminous. They grow FAST and they are not ugly, in my opinion. And the seeds are relatively small enough for a seed bomb.
