I've only grown Wine Caps. The first year, I was nervous about prepping the bed correctly, so I kept the spawn in the fridge until November...at that point, I figured it was too late, anyway, so just go for it. I put them out back, using cardboard and straw, and then covered them with leaves. Somehow, they still grew and are producing like crazy. In the meanwhile, I'd ordered more spawn to spread in spring. Those two packs also produced like crazy. Here, I find that I get two main flushes. The first is in early summer/late spring, and the second is in early fall. Each only lasted for a few days, but boy, did they produce. They give off a lot of water while cooking, which I did before freeze-drying what I wasn't going to eat right away. From there, I blended them up in the food processor and use them for soup...lovely on a cold winter's day!
The ones that get too old, I just break apart and replant under the leaf litter. They can be a perennial crop as long as you keep feeding them plant material. For me, that's where I put all of the fallen leaves.
