Unfortunately, most pressure canners don’t work with induction burners. And it is really hard to find a stand alone 120v burner with enough umph to get a big canner up to temp. A regular outlet is limited to about 1800 watts which is ~6000 btu or barely medium on your range burner at best.
Do you have a 240 outlet available somewhere? Like a dryer in the garage? Then you could get a cheap used electric stove and swap plugs with the dryer.
Another option is a smaller propane burner, like a good Coleman style camp stove. The cheap ones are only 8000 btu but the better ones are 12-15,000 (same as a high end gas range) and have good simmer control. Turkey fryers often won’t run below 20,000-so, yeah, that’s a little too exciting.
The other great thing about a camp stove is you can run it on a low platform so the top of the canner isn’t too tall to load and unload. The cheaper aluminum work platform/step stools from Home Depot work well.
