I bought myself a new toy and I love it.  I hated the big huge Instant Pot I got a few years ago for Christmas.

New toy is a Instant Pot 3qt Mini:

My first attempt was two leg quarters,  seasoning, 1 cup water then cooked for15 min on the pressure cycle.  Took the chicken out and added sliced potato and a onion cut in quarters, 1 cup water then cooked for 5 min on pressure cycle.  Took the potatoes and onions out and added 1 cup rice, 1 cup water then pressed the Rice cycle.

The rice setting was pre-set for the amount of rice.  I had to cook the rice for two cycles and it turn out perfect.


Honey Chicken

1/4 cup soy sauce, 1/4 cup honey, 2 tsp minced garlic, 1/3 cup chicken broth, 1/4 tsp black pepper (mix together), 2 boneless chicken breasts, 2 tsp cornstarch.

Brown chicken on Saute. Removed chicken: de-glazed with a little water maybe 3 tsp, then added sauce to pot, Replaced chicken in pot, closed lid: pressured for 10 minutes. Quick release, removed chicken add cornstarch mixed with water to thicken sauce. Spoon over chicken.

Anne, this sounds like something that I might use.  Cooking for one I need something smaller than most would consider using.  My only question is about the clean up, easy? somewhat hard? real pain in the major point of contact???

Your chicken dish did sound very good!

The reason I got rid of the big Instant Pot was I hated cleaning that big inner pot.

This 3 qt mini is so easy to clean.  I did the rice to use up the stock that was left after cooking the potatoes.

I then filled the inner pot with soapy water and let it sit an hour more/less.

First I used a soft brush to tackle any thing that was stuck though there were only a couple of places.  Then I emptied the inner pot and used a 3M pad with a dab of soap to finish the cleaning.  

I am still working on eating the rice and potatoes so I have not tried cooking anything else.

First I had rice and chicken, then rice and sausage.  I thawed some roast beef so I had roast beef with rice for lunch and roast beef with potatoes and onion last night.
