What is cube steak anyway?

I have acquired a few cuts of cube steak that have been sitting in my freeze and I'm getting the itch to try cooking them. I have childhood memories of a tough and chewy steak but I'm sure there must be better ways of utilizing the cut.

I always thought of cube steak as a cut of meat that has been cut to make it more tender.

Probably good as Chicken Fried Steak with mash potatoes and cream gravy.

Yup. I agree - "chicken fried", seasoned well with salt and pepper, with a nice brown gravy, your favorite potatoes (smash-fried is my current saliva kick-starter, and easily done in the same pan as the meat.) A salad or veggie (mmm... green beans with garlic, onions, & bacon, maybe???) and a big glass of iced tea...




a nice strawberry shortcake for dessert...
