Hey fellow nettle harvesters and fermenters -
Always wonderful to have more uses for nettles... and we are at the autumn time where new growth is pupping up to replace what has been cut, in one last enthusiastic surge before sleepy winter.

I am taking some classes from Brandon and Lauren Sheard at Farmstead Meatsmith and I really dig the "peasants harvested nourishing, honest food for centuries through simple butchery and preservation methods that we can all get really good at..." approach. (Highly recommend his podcast / classes).  In the members materials on their website, there is a great 'recommended reading' book list, which includes 'Farmhouse Fare' published in 1935 in the UK (with later edition updates), a compilation of many farmers' best recipes published in 'The Farmers Weekly' , the source of these recipes (attached).

Practicalities: UK uses Imperial Gallons: 1 imperial gallon = 4.55 liters. 1 US gallon = 3.79 liters. The tonic is a straightforward herbal syrup.

Help please with brewing (newbie) recipe / translation questions:

The Beer - hmmm, 4 lb of malt.... this is 'brewer's malt' as in grains? or diastatic malt powder as in a bread making ingredient?  or dry malt extract powder?
The Stout - black or burnt malt is???   'Chocolate brewing malt'?   'Caramel whole grain malt'?

I love that book - although I haven't investigated the brewing section much....

My guess is that the malt is just that - malted barley. You can still get black malt for brewing stout and porter: https://www.themaltmiller.co.uk/product/black-malt/ for example

Great, Nancy  - thanks for sharing that!  There is a lot of info on their website, and it introduced me to a new word:

Our malt comes from the same maltsers that professional breweries use. All of our malt is purchased whole/uncrushed, which ensures that it retains the correct moisture levels as the maltster intended.



Never heard of a maltser, but clearly it is a title, and some types of hooch wouldn't exist without maltsers!
