I would encourage you to jump in and start. Running a business is lots of work, but also lots of fun.

Pricing is always a struggle. There are people who do things as a hobby who sell stuff without thinking about how much it costs. Which makes it difficult for people who are trying to do it as a business :)

I like your idea of offering a discount in exchange for an email :) That is always good for marketing.
