I add the onion scraps to my stock pot when i am making stock
My goats will eat the papery outer part(skin) of the onion
Otherwise i put them in the compost as has already been stated.
When i bring the onions in from the harvest, there is usually a large amount (apple box) of skins which i give to the goats or i go and mulch our fig trees to provide them with more organic matter.
My wife has used the skins to make a yellow dye as well. Kept them in freezer until she had enough for her project. I don't think she has tried purple/red skins yet though.
