Glad someone else makes bread mixes and we can compare notes.
I have stopped using rye flower and i have switched totally to King Author's flour as it is non GMO, and rises great.
I played around with organic rye flour but as you say it does not rise very well, to keep they taste I simply add the caraway seeds.
I use this same mix for pizza dough with the dough setting on the bread machine.
I have also taken the liquid and blended up a couple bananas and added that to the bread with good results.
I have also used this in my solar cooker and it turns out great.
Rye Bread machine Mix Modified
In jar / container add then store.
1 1/2 teaspoons sea salt
4 cups bread flour
1 tablespoon pwd milk
Then when ready to make bread put into bread machine in this order.
1 1/8 cup warm water
4 tablespoons honey
( Jar of ingredients of list above )
1 teaspoon active dry yeast
1 teaspoon of caraway seeds.
