I was hoping to hear about harvesting the rice at the end, though that was not mentioned.

Don't worry! It's harvested by volunteers as a tourist event. This video is old, but I promise they do it every year.



The rice is offered as rice balls or mochi, etc. at the planting, harvest, and winter events. And sometimes sold. Below is from a different town...most Japanese town offices are still really behind as far as uploading media and such....but you get the idea.



This is the same town. They started winter rice field art in the snow as well.
