Rooted and planted supermarket shallots 3 weeks ago..

I bought some shallots from Aisan market about a month ago.  Sat them in some shallow water to root.  They did and well I transplanted them about 3 weeks ago into the garden.  They immediately grew tons of green leaves and already are starting to divide.  Thing is most of the bulbs feel really soft now.. although the leaves look really healthy.  Do they get relaly soft when they first start dividing?  Or did somethign go wrong and I need to dispose of them?

I wouldn't worry if the leaves look good.  I've grown supermarket shallots and the did really quite well in my garden!

Did you notice if the bulbs felt softer?  Maybe they feel softer because they have already divided so quickly?  I see a lot of seperation at the bulb and there are multiple bulbs forming now.. amazing how fast they divided.. like in 3 weeks.

Often alliums grown this way (from store tidbits) go soft. They shift focus to their leaves and,  if left long enough, flowers and seeds. These shallots may or may not bulb up again. But the greens are good to harvest repeatedly so long as you don't take too much at any one time!

Shallot greens do taste good.. better than the greens of a scallion I think.    How much is too much at one time?  Can I take 1/2 their length?

Half should be fine. I wouldn't take more than that, but that much should be good

This omelette tastes especially good with the sliced shallot greens sauteed in butter before adding the egg.   Much better than scallions in my opinion.   I know when I make omelettes it will often be with these shallot greens and/or the chives .. but it will be a while before the chives mature.
