Coconut "Bacon" Recipes/Ideas

This weekend had a salad that had a "bacon" that was made of coconut with seasonings. I am not a fan of coconut usually, and I don't eat bacon, yet this was super good! Has anyone ever made something like this? What do you flavor it with? Any other things you like to use to add a little to your salads? I'm inspired!

Yes I have! The flavors I use are soy sauce, maple syrup, and liquid smoke. I have made vegan bacon out of tofu, seitan (Wheat gluten) and tempeh. The texture of seitan and tempeh bacon I feel is better than tofu bacon.

Bob's Red Mill had a coconut bacon recipe on the back of its packaging, and I'd wanted to try it. Unfortunately, I lost the recipe. But this one looks very similar:

VEGAN COCONUT BACON BITS
These are very simple to make requiring only a handful of ingredients including:

Unsweetened shredded coconut (I like and recommend Bob’s Red Mill brand, you can get them right here on Amazon)
Soy sauce
Maple syrup
Extra virgin olive oil
ACV
Smoked paprika (I recommend *McCormick Organic Gourmet, you can get it right here on Amazon)
Garlic powder
Onion powder
Liquid smoke (I used this brand, you can get it right here on Amazon)
