Making it different this year! I have 4 gallons of green grape juice! This time I put in Gluhwein spices (German mulled wine or punch) in a bag and simmered for an hour. I will make 8 pints of jelly and turn the rest into trouble juice. Trouble juice , well , I invented it (More like stumbled on to it ) for my hubby, he is stubborn and will not use his glucometer. Does  not like the glucose tabs they don't work well for us. The trouble juice works faster. He's been Type 1 diabetic since 14. He occasionally has the sugar issues at night and having a FIX by the bed is great.  When its canned it doesn't spoil.... So ready!  Since I started making it we have only had EMS out once. (Used to Be a twice a month ish thing for us)

trouble juice ( basically canning syrup)
1 gallon fruit juice
4 Cups of sugar
water bath

I know refined sugar=bad. This seems to work better than cramming candy until he's nauseous.

What size jars are you using, and for how long do you process them?

As for the refined sugar, you and your hubbie know what's best to keep his glucose stable. Many diabetics keep a bottle of fruit juice close by for sudden dips. And with your juice, you know exactly what's gone into it. So in my mind, yours is way better than store bought stuff.

pint jars brought to boil filled hot jars I processed for 45 min.
I suppose i should have looked up the time.... Probably cooked it too long. All but one sealed which worked out fine I dumped it into the mango mash in the crockpot.  Mango stuff will go in freezer until I get more jars. On mango day I plan to make carrot cake marmalaide too. No recipe yet i have to study and decide on ratios.

For sugars in the juice I use a combination of cane sugar and monk fruit .
