My bread machine has a jam setting.
It's pretty cool.
But the recipe sucks! 1 cup water, 1 cup sugar, 4 cups fruit, 1 packet "pudding powder" (it's poorly translated). the cycle goes for 1h 20 min with frequent stirring. My thermometer says it gets to 180F, but I might not be measuring at the hottest time in the cycle.
If I assume pudding powder is pectin, then it makes a runny jam at fridge temperature that is liquid with chunks at room temperature.
Experiment 1: No water added!
4 cup fruit
1 cup water
1 generous squeeze of lemon juice.
Leave in a bowl overnight to make it juicy. Put through the jam cycle. Too runny, so add pectin and put through the cycle again. Very nice. Can 10 min water boil method. Looks pretty thick in jars, but not quite perfect.
Experiment 2: more sugar added!
4 cup fruit
2 cup water
3 generous squeeze of lemon juice.
Leave in a bowl overnight to make it juicy. Put through the jam cycle. ... and that's as far as I've gotten. It will probaly need the second cycle as it tastes more like compote than jam. If I cut up the fruit smaller the first time, I think it would be better.
