Last year we had a bumper crop of cherries.  A branch broke with some almost-ripe cherries and a friend suggested I stone the cherries, and put them in honey.  Leave on the counter for a couple of weeks, then put them in the fridge.

So I did.

Now what do I do with these excessively sweat, slightly alcoholic cherries and honey juice?

so this was not to make a cherry mead? It was some way to preserve them?

Usually after we rack the initial ferment into a carboy with an airlock, we bake with the berries/raisins.

We had to many last time and the chickens loved them!

It depends on what you want to use them for. You can let keep letting it ferment outside your fridge, this will make a very nice mead. You can dehydrate the presoaked cherries and use them in cakes and desserts.
The flavored honey can be added to tea, mixed with hot water for a drink, or used as a sweetener for cakes and desserts.
