I've been experimenting making Kvass all summer.
Fresh figs & cape gooseberry are okay in small amounts but I had lots so I made Kvass.
This batch is crazy bubbly🍾
What's your experience been?

I have tried water kefir with most fruits including figs and it was delicious. But I have never tried making fig flavored Kvass. Which grain do you make it with, rye? Where do you get your starter yeast from.

Have you ever tried making water kefir (its different from regular dairy/milk kefir)

Just the natural yeast on the fruit.
Sometimes unpasteurized honey.
I don't 'wash' any of my fruit or veg, just a rinse if needed (excess soil on it)
