Dosas are crepes made from lentils and rice. Generally, you soak the rice and lentils until soft, blend them to a batter, then let the better ferment. They're delicious.
I have an 8" stainless steel frying pan that I've seasoned like you would a
cast iron pan. I only use it for dosas or other pancakey type things. I don't have an
oven, so
pancakes, usually made from chickpea flour, get used a lot at my house in place of bread. After each use, I wipe the pan with a few drops of oil, and it's ready to go for next time. Never sticks, unless my husband gets his hands on it and (ab)uses it for other stuff.
