Do permaculture farms have the same stresses?  Or, what would a permaculture onion farm look like?  Does "permaculture onion(/fill_in_the_blank) farm" even make sense?

I think that farmer has glossed over reality.
The comparison with driving to work with a faulty fuel gauge on the vehicle with the vagaries of the weather is similar, BUT, the information about the benefits crop insurance,
the huge sums of cash involved when preparing the crop and the crop is picked, huge tax break paid for by tax payers, are not mentioned,.
Farming can be a tough business and if huge debts are included with a run of bad weather it will be bad.
But many farms do well.
The bigger problem I believe is the presence of huge corporate farms, where long term protection of the land may not be a priority,
mono cultivation may destroy the landscape totally, the reduction of labour required means communities simply die out.
