Welcome to Permies Alfred! That's neat with the orange growing, I'm hoping to grow some here in a greenhouse soon.
If there is a way to plant them in the ground I highly recommend it as the plants will be healthier that way, but if you have to plant them in pots I would get the biggest one available and plant it in compost with a mulch on top.
If you can plant it in the ground, I would cut it halfway up the trunk to reduce transplant shock, especially since it's an apple and you're in such a warm climate, mulch like Jake mentioned and I've used leaves with good success also.
The only other thing would be to check that they flower near the same time and can successfully pollinate each other. Good luck with your new apple trees!
