Hi Rose,
Late May into June is a lovely time to visit Scotland. The midges start being a nuisance usually into June, so you
should be fairly safe for a while! It's not too late for helping out - probably with transplanting and mulching rather than sowing and preparing. We have a short cool summer, so even some brassica may be transplanted. Animal help year round of course!
If you haven't already, I suggest you contact the
Permaculture Scotland group and have a look at the
LAND projects which are open to some extent as a demonstration network. Unfortunately it looks like the links are broken on that page, but most will be easily found from an internet search. For example I found this one straight away:
