Short version: Looking for suggestions for perennial crops / tree crops that ripen during the school year and need little attention in summer, zone 6.

Long version: I’m interested in developing permaculture projects at the school where I teach.  We are lucky enough to have two campuses - one in the city and one on a former farm (not truly a farm anymore but plenty of little pockets of open land).

Ideally, crops would need very little to no care over the summer, when no one is around.  And ideally, crops would ripen in the fall or spring so that students could interact with the food system.
