Herbal Medicine 101: Tarragon

I tell you about the medicinal and culinary use of Tarragon.  This is truly one of my favorite culinary herbs. It is essential to the French cooking that is a big part of my heritage.  Medicinally, it is perhaps the most mild member of the Artemesia family. It is good for colds, flus, fevers, menstrual issues, sore muscles and arthritis, indigestion and parasites.  The scent and flavor are incredible, but its medicinal uses are often overlooked in our time.

I make a tarragon vinegar, with white vinegar or white wine vinegar and tarragon - that's it. But, it makes for an amazing homemade cole slaw dressing, combined with homemade mayo, a few drops of stevia, a pinch of Himalayan salt, and a bunch of black pepper...

Just a spoonful of cole slaw makes the 'medicine' go down, the medicine go down, the medicine go down...

(Also great with fish, chicken or pork, on veggies...)

Cooking, me too - a few teaspoonsful of tarragon vinegar are essential as the last step before bottling tomato sauce (the ketchup sort, with sugar and vinegar as ingredients)
