I use pumpkin seeds wherever I'd use any kind of nut, including in stir-fries, which can be put in e.g. miso soup too, sprinkled in pasta or rice dishes, salads, even stews.
Apparently, all edible winter squash seeds are themselves edible?
The steps to processing the squash seeds release the kernels or pepitas, I'm told require (1) carefully cleaning, (2) air drying and then (3) parboiling for c. 15 mins. Only then will the hulls come away somewhat cleanly from the kernels.
But there are some winter squash bred to have minimal hulls on their seeds.
Pepitas are, I believe, relatively low in the fermentable carbohydrates which cause a lots of IBS symptoms. Certainly, I've happily eaten a lot of pepitas in the last 7 months since being diagnosed with IBS.
