I just had a salt pickled cherry tomato for the 1st time! My 1st thought was Wow what great bar food this would make. A hardboiled, then pickled egg
and about 6-8 salt pickled Cherry Tomatoes ! then beer or Vodka to taste ! Big AL

My whole family loves pickled eggs but I am just not sure if I am ready to try one yet. I am not normally this picky but something about a pickled egg just seems weird to me! Haha

I started out making kimchi yesterday, but it ended up "not kimchi." I had multiple heads of napa cabbage in the fridge, and I used mostly the stems from those, but after I added a dark purple carrot, the brine turned pink and I decided I liked that too much to cover it up with the red of powdered chillies. I've got a couple of orange carrots, maybe three purple carrots, one little leek, two big onions and a small purple cabbage (added after I decided I was going for a "pink" theme). I grated fresh ginger and garlic, and then of course there is salt. It filled a gallon glass jar and most of a quart mason jar.

I can't wait to see how it turns out. I've been eating kimchi (from Costco!) with my omelets for months now, but I think this will be just as good.

Julia, your kimchi, or "not-kimchi" or whatever it turns out to be sounds great.

And Cassie, don't think of it as a "pickled egg" think of it as a hard boiled egg that's been soaked in vinegar, onions, and beet juice. They're fantastic!

It is! The strongest flavor is the fresh ginger.
