What would your thoughts be on including these cheeses in a keto oriented diet - maybe even replacing traditional cheeses altogether?
Any ideas about using hazelnuts and/or acorns? Amaranth? Buckwheat? Cattails? Looking for uses for things that grow here rather than those that I have to purchase.
This is something I'm very interested in too as I have to seriously control my carb intake. Has any research been done with culture vegan cheeses to see how many carbs are left? I know that in dairy cheese it's virtually all used up and I'm guessing that something similar would happen with plant-based cheese.
