Trusses actually do use less lumber and they provide clear, open spans where you can lay out almost any floor plan.
The down side is getting trusses up onto the walls. You need a crane or boom truck to get into the site or you have to make a Gin Pole or other type of lifting device, where as if you're making you own rafters and floor joists, you get the pieces up there one at a time.
You can make your own trusses too but that takes some time and making them yourself isn't as accurate as buying them from a shop that specializes in producing them and it's hard to get them lifted into place without making a lift of some kind.
