My almonds smell funky

We always soak our almonds and then dehydrate them before eating them. This time I may have let them soak too long. When I looked at them this morning there was mold on some of the almonds poking above the water line. And when I went to smell the almonds (even below the water line), they smelled kinda like almond extract instead of just almonds. I rinsed them really well and threw them in the dehydrator but I'm wondering, are these salvageable in any way? Or do I need to be really sad that I wrecked so many expensive almonds?

Any advice you have is appreciated!

I'm not sure,  but i wonder if salting that batch would be a "just in case" solution to save them.

Thanks for the suggestion. What about roasting them too?

you can wash and triple rinse the almonds then dry them. This is similar to how Diamond processes their almonds for getting the skins off.

Once you have them dried down in this process you can roast them and salt them as they come out of the oven.

I'm curious though, what does such a soaking do for the almonds?

It breaks down the phytic acid.  Otherwise the phytic acid binds with minerals, etc. and prevents absorbing them.  This can (in extreme cases) lead to nutritional deficiencies.

Thank you for that information. I've always washed mine but I've never soaked them. I will have to make some adjustments to how I treat my almonds.
