I've always heard about people having apple pie with cheese, but I've never tried it....or even seen it!  

Anyone here go the apple and cheese route and if so can you share what you do?

I did a little digging and found this article at Atlas Obsura

And this video from Tasting History with Max Miller, which I'm thinking about making tomorrow:

Fresh hot homemade apple pie, preferably from your tree.
A thick slice of Vermont sharp white cheddar on top.
Heavy cream spooned over the top...
OH My, that is the good stuff!

Greg, I gave you five apples, hopefully, that’s enough to make your pie tomorrow?😂

Thank you for this! At first I thought it was about eating the apple pie with cheese (which, for me would be totally fine, as I can eat cheese any time and with anything!), but then, watching the video, the cheese goes in the filling! And the apples are fried! Oh, yuminess!

I’m gonna have to make this!

And saffron in the crust, never heard it before, but what do I know…

5 apples is perfect for this recipe Liv!  Thank you.  Now I have to do it!  

I just harvested and dried this year's saffron, so now I know where a pinch of it is going.

That episode had me giggling a good bit.  There's another quote from it that I'm going to post in the quote of the day thread, so look out for that!

Oooh, I need to make your version too Thomas!  Thank you.  I might just eat versions of apple and cheese pies tomorrow for all my meals.

This was something all my grand-relatives in Iowa would do; a slice of cheddar or even American cheese with apple pie.  These were folks born before 1930 who grew up on farms.

But -- I would never mix them! A bite of warm apple pie, and a nibble of old cheddar -- it has to be the right mix of sweet and tart to work. Kiss and squeeze, it's a slow dance that transcends any recipe.

After a day of outdoor projects I did in fact use those 5 apples, Liv!  But I was (am) a bit tired and between having to watch the video as I pulled the pie together and the fact that Max said it tasted like an apple quiche, I opted to try something a bit more modern.  I went ahead with a lightly modified version of this apple and cheese recipe.  I didn't have Granny Smith's so I added a grated flowering quince from my lemon like seedling bush.  I also added that pinch of saffron to the crust.  Very curious if I'll be able to tell on either count.

It's cooling right now and smells like it will deliver the squeeze.  It's difficult, but I'm going to let it cool just a little bit.

I think after I finish this one off I'm going with you guys' suggestion of a standard apple pie with the cheese sliced onto it.  Go for that slow dance!

A long as is the sharpest cheddar, gruyere, or the butteriest baby Swiss you can get your hands on!

It sounds like you had the same reaction the video host did. He also said he expected “pie” and got “quiche”, he he.

I will still have to try making it. Can’t imagine how it will taste with all the “pie” spices.

What kind of cheese did you use? I wonder if going with a tasteless (but flavor absorbing) paneer would be a good idea, or better with a flavorful cheddar?

And how about the saffron? Did it make the crust different? Out of this world? Meh?
