Sweet potato tortillas/flat bread

I saw this on youtube and it looked neat. Recipe is ruffly half flour/half sweet potato. It has to be soft. Canned or boiled. Many substitutions can be made. Winter squash being one. I may try it with yellow squash or zuchini as i have cans i put up last year.

Put the mush in a bowl. Keep adding flour and kneading til you have a workable dough(not sticky).

After that roll them out and heat in a hot skillet. They are very pliable. I am looking forward to trying other garden items.

Today they were used for fish tacos.

Next up is using last years canned zuchini. It had no taste that carried into the tortilla. Other than the visible specks of peel and seed, you would not know it was in there. The sweet potato had a slight sweetness that carried over.

Yellow squash will be next. This seems like a good way to rotate out canned stock. I am enjoying this.

If you make them with Potato they are called Lompe and are very common in Norway, generally wrapped around a hot dog.

This time i used canned yellow squash. It came out like the zuchini. Good pliabililty. No squash taste transferred to the tortilla.

I used corn i canned earlier this year. I blended it into a cream (whole can with juice). Added flour till i had a dough. Turned out good.
