Ground curly dock seeds and acorn processing

So we've started selling items from our land. But items that others have for sale are catching my attention. How can I use ground Curley dock seed? Will it be worth the effort?

Also, we are starting to process acorns. I’d love some suggestions on how to use them. Thanks y’all!
