Yesterday I had to go into town on way home stopped at Walmart. to my surprise they had a whole aisle of stuff on clearance. being the frugal individual I am I looked to see what was there.
Dark rye flour $1. Organic bread flour. 5lb/$2 no hesitation in the cart it went
I like a slice of toast with eggs in the morning. things were crazy today and I figured i'd throw some stuff in the bread machine. here is what I concocted.
1 cup very warm water
1 tablespoon brown sugar
1 tablespoon peanut oil
1 tablespoon molasses
1 1/2 teaspoons salt
1 cup whole wheat flour
1 cup bread flour
1 cup dark rye flour
2 heaping tablespoons caraway seed
1 heaping tablespoon fennel seeds crushed lightly in mortar pestle
2 teaspoons quick yeast
pushed the button
almost 4 hours later WOW
by far the best bread that has come out of this machine yet
if you like bread with flavor
I found the best place to get caraway and fennel seed at oriental market, freshness and quantity for price can't be beat.
Mmm... that does sound good. We have a baker that used to bake sourdough for our shop and one of her recipes was an 'Ethiopian spice' bread. It made the front of the shop smell divine! We called it spicy nipple bread due to the shape....

You hit a lot of my flavor favorites with the rye and molasses and caraway, but especially the fennel seed, which I think makes everything about 85% better.
